3) The Anarkali cocktail with gin, Campari, sweet vermouth, Darjeeling tea & cardamom inspired by the Negroni
4) Japanese eggplant with yellow pepper romesco, cumin yogurt, pomegranate and mint
5) Tender braised boneless beef short ribs in a Madras curry with bone marrow kurchan or gravy, and baby vegetables
6) One of the favorites for the night - the classic Baar Baar butter chicken with red pepper makhani sauce and fenugreek shoots
7) Tandoori butternut squash with millet khichdi or porridge, asparagus and black rice pappad crisps
8) Of course we had some garlic naan!
