@the4bz loves shrimp and peas and especially loves any dish that has both. This buttery shrimp with peas and potatoes checked off that box and more! The sauce is pretty much a scampi sauce with butter, olive oil, garlic and wine. The potatoes are boiled Portuguese style in heavily salted water and the English peas add a touch of sweetness to balance it all out. Typically, I like a nice oaky, buttery Chardonnay with shrimp scampi but a non-oaked Chardonnay worked well with the components of this dish. Just make sure to serve some crusty bread to sop up all the delicious sauce! Another @justinchapple recipe from @foodandwine
A great photo taken by @the4bz of the Citrus and Fennel Chicken with Olives and Calabrian Chiles that I made for Sunday dinner last weekend. So many flavors that just come together in the Dutch oven as they should in any dish. A great meal should be like a symphony and this hit all the right notes. It’s a recipe from @justinchapple on @foodandwine that is fennel heavy (yes!) and just a touch spicy. Not too much so that a nice Italian red blend wouldn’t work. In fact the Vinum Italicum No. 3 Opera from @cantine.tinazzi was a fantastic pairing. This one will be made again for sure!
I tried a recipe I saw yesterday on Food and Wine by Justin Chapple. It was easy, summery and delicious. Make a simple vinaigrette with sherry vinegar, olive oil, finely grated garlic clove, dried oregano, salt and pepper. Marinate sliced tomatoes and sliced red onion for up to an hour. I marinated chicken breasts in the same vinaigrette separately, then grilled the chicken and sliced it. Place your grilled chicken in the tomato vinaigrette and serve. I think the sherry vinegar makes all the difference in this recipe. I topped mine with fresh basil and fresh oregano. I served this with two of my son’s favorite side dishes. Drain well in a fine sieve and spread on a rimmed baking sheet. Let stand, tossing occasionally, until cooled and dry. ⠀⠀⠀⠀⠀⠀⠀⠀ Set a fine sieve over a heatproof bowl. In a medium skillet, heat 1/4 inch of oil until shimmering. Add the quinoa and fry over moderate heat, stirring, until the sizzling subsides and the quinoa is crisp, about 2 minutes. Bready, set, go! I’ve been making lots of sourdough. This “everyday” version is easy and forgiving. But it’s made so much better with @lecreuset ’s new Bread Oven. The domed lid traps and circulates steam for a wonderful rise while the low-profile base made of their signature cast iron promotes browning. ⠀⠀⠀⠀⠀⠀⠀⠀ The hydration level (% of water to flour in the recipe) in this recipe is slightly lower than many others, which means the dough is less sticky and easier to shape. It’s a great tasting, consistent loaf with a slightly tighter crumb. ⠀⠀⠀⠀⠀⠀⠀⠀ As you become more experienced with sourdough bread baking, you can begin to gradually increase the hydration level to achieve a softer texture and more open crumb. We opted to use what we had in hand in the garden so it was less of rainbow, but still really yummy! Six layers of colorful vegetables cook together in this free-form gratin; panko and Parmigiano-Reggiano absorb extra juices and provide a nice crunch. Dial in your knife skills or use a mandoline to cut the vegetables into thin, uniform slices to ensure easy layering and even baking. Active: 40 mins Total: 1 hr 15 mins Yield: 8 Greens Pasta Salad © Con Poulos Ingredients Ingredient Checklist Ice Kosher salt Pepper 1 pound asparagus, trimmed and cut into 1-inch lengths 2 cups peas, fresh or frozen 1 pound campanelle pasta 1 cup buttermilk 1/2 cup mayonnaise 3 tablelspoons Champagne vinegar 1 large garlic clove, grated 1/2 pound arugula (not baby), thick stems discarded, leaves coarsely chopped Directions Instructions Checklist Step 1 Set up an ice bath. In a large saucepan of salted boiling water, cook the asparagus and peas until crisp-tender, about 2 minutes. Drain and transfer the vegetables to the ice bath to cool completely; drain well. Step 2 Fill the saucepan with water and return to a boil; season generously with salt. Add the pasta and cook until al dente. Drain well and transfer to a large bowl. Justin Chapple's Chicken and Tomatoes. Look at those colours. This lovely colourful dish was on the Food Network Instagram feed. Justin’s trick is to marinate the vegetables instead of the chicken and use the leftover marinade as sauce for the chicken. Pound the chicken thin so it takes very little time to grill, 2 to 3 minutes per side. Brush with a little olive oil and s&p before grilling. Heirloom and cherry tomatoes with sliced red onion 🍅🧅 For the marinade: in a bowl, wisk together 1 cup of olive oil, 1/4 cup of Sherry or red wine vinegar, 1 tsp dried oregano, s&p. Pour over the veg and let sit for at least 30 min but longer is better. I did not need all of the dressing as I cut the rest of the recipe down for two. The leftover marinade will be on my salads this week and I am looking forward to it. #homecooking #justinchapple #foodnetwork
