Hubby requested #Sukiyaki when he returns from London today so that’s what I’m making. It’s been very cool here got into the 40’s last night! Sukiyaki is my favorite Japanese hot pot & it’s very easy to make. You can substitute with other veggies, protein & put in whatever you like but these ingredients are the traditional Sukiyaki ingredients. My foolproof recipe below. (Uwajimaya & H Mart etc. carry all the Asian vegetables in my recipe plus the meat sliced for hot pot).

Sukiyaki ~ Japanese Beef hotpot
Ingredients:
Sauce Ingredients:
1/2 cup soy sauce
2 tablespoons sugar
1/4 cup sake
1/4 cup mirin
Other ingredients:
1 - 1 1/2 pounds thinly sliced Shabu Shabu or Sukiyaki style beef (some Asian markets sell it as Shabu Shabu or hotpot style beef)
3 tablespoons sugar
2 large Japanese green onions (naga negi) or 1 bunch scallions cut into 2-inch pieces
6 ounces yam noodles (shirataki)
1 bunch (4-6 stems) chrysanthemum greens, Shungiku
6 - 8 shiitake mushrooms
1 pkg tofu cut into 1-inch pieces
1/4 head of Napa cabbage, chopped
2 tablespoons sesame oil
Cooked Udon noodles to add at the end (optional)
Preparation:
Mix the sauce ingredients, soy sauce, sugar, sake, and mirin, together in a small bowl. Arrange meat and vegetables on a large platter. Heat a large hot pot, sauté pan or skillet over medium heat.
Add sesame oil to the skillet and heat on medium heat.
Brown meat sprinkling the 3 Tablespoons of sugar on top of the meat evenly. Move the meat to the corner of the skillet when slightly browned. Add the vegetables & tofu.
Pour sauce ingredients on top of everything and cover. Bring to a boil and cook for 5-7 minutes. Uncover and cook for an additional 5 minutes or until desired doneness.
