It’s hard to believe that it’s been a couple months since @goldensaddlecyclery closed its doors for good. BUT before they shut things down @alecbattistoni was able to collaborate with them to design and make these wonderfully packable hats, which in turn helped us send some coin towards youth cycling and safety programs in LA (w/ @kylebkelley ‘s guidance). Grab one of the last 20 hats for yourself and your pals, jump on your bike, and jam. (Helmets are also advised 😇)

This new edition came on as a collaboration with @tartvinegar and they’re so extraordinary that they are now a permanent fixture with rotating vinegars as the star of the show. @tartvinegar please come back and teach a class in LA!🔬 Just like the chemical reactions that created lava projects in your childhood classrooms, it also causes fluffy pancakes when vinegar and baking soda join forces in a batter. And it’s just the rising you experience, not necessarily flavor. Currently using @camino_oakland rosé vinegar finished with JAMPOTE (fruit cooked and folded into jam and acidified with more of the vinegar) and served with a lady grey syrup made with @rareteacompany Earl Grey. 🥞
✨HOPUS 🍓 POCUS ✨ Hope ( @starpower_starpower ) has conjured up a strawberry jam matcha, an off menu variation of John’s strawberry milk cappucino. Ask for the strawpower and you’ll get to taste the mystical. The secret behind the magic is steeping @prosciuttosnacks Sqirl strawberry jam and @minorfigures oat milk & then topping that with @ippodotea matcha concentrate, and a dash of rose powder.
Loooooooooooong Toast on our seasonal shakshuka. Currently w/ San Marzano Tomatoes, Lacto Fermented Chiles, Garlic, Onion, Smoked and dehydrated bay leaves, Coriander, Cumin, Madras Curry, dehydrated cured black olive, Garlic-y yogurt sauce, & herbs. @starpower_starpower & @willygtho have been fighting lately 😔 thankfully they were able to resolve their differences over toast sabers this afternoon.

What a year it’s been and there is so much to look forward to in 2023! Whether it’s our successful push to do away with all single use containers in the restaurant, the continued preservation work at our fermentation facility (for ourselves, farmers & other restaurants), or a new culinary chapter we can’t wait to share, we’re always learning & growing with each season.
