Full recipe:
- To a pan add in 3 diced cloves garlic and 1/2 inch finely diced ginger (use Thai ginger if you have it)
- then add in 1tsp chilli flakes (can modify based on your spice preference), and 1/2 diced onion
- Once the onions start to become translucent, add in 1tsp basil and your protein of choice (optional if your vegetarian)
- once the protein is halfway cooked add in your veggies of choice, red/green bell peppers go really great in this
- the. Add in 1cup coconut milk, 3cups waters, bring that to a boil and then add in 2tbsp soy sauce, 1tsp brown sugar, and 1/2tsp fish sauce (fish sauce is optional)
- Then add in your noodles and boil together till noodles are cooked
- then garnish with cilantro, spring onions, and some lime juice
