Cheesy Potato and Cauliflower Mash with Spinach and Cauliflower Leaves (how-to below with options and substitutions). This one makes a wonderful addition to your holiday table. I saw some gorgeous heads of cauliflower at the farmers market yesterday and I’ve been dreaming of this ever since. It’s easy to adjust the cauliflower to potato ratio to suit your desires. If you do go with a fresh head of cauliflower, don’t discard the leaves as they’re delicious. I choose baby greens here as they wilt down easily without additional cooking. This may easily be made vegan.
HOW TO- (substitutions at the end) I choose a creamy potato variety (like Yukon gold, German butterball…), peeling optional, and cut them into similar sized chunks. Place in a large pot with cold salted water and bring to a boil. Remove with a slotted spoon when fork tender. Add to the same boiling water, an equal or desired amount of cauliflower florets and leaves and boil until tender. While the cauliflower cooks and the potatoes are still hot, rough mash (I used a large serving fork) with a couple of large handfuls of grated cheese (sharp cheddar and goat Gouda are my go tos), a nob of butter, and a dollop of crème fraiche. Season with flaky sea salt and fresh ground pepper to taste. When cauliflower is tender, add it hot to the potato mixture (you may discard cooking water) along with a few large handfuls of baby spinach and mash it in. Roughly chop cauliflower leaves and stir them in. Add fresh herbs of choice. Adjust seasoning and drizzle with olive oil and a pinch of chili flakes. SUBSTITUTIONS- go really cheesy and decadent or clean and vegan. Sub in fresh Chèvre, sour cream, greek yogurt or a splash of heavy cream. If vegan choose a thicker styled unsweetened plant milk, plant based butter, cheese and/or cashew cream… This also works with stronger cheeses like Parmesan, Grana Padano or even a blue cheese. Choose any greens you prefer like (baby) kale, chard or broccoli. If choosing a hearty green or broccoli, quickly sauté or steam respectively before mixing in.
