[…] In March 2021, I embarked on a new venture by launching Tokyo Chopsticks as a food pop-up. The onset of the pandemic prompted me to seek ways to create my own resources and income, considering the unpredictable and unstable nature of the food industry and traditional employment.
When initiating this pop-up concept, I made a deliberate choice to emphasize local Alberta products in my menu creations. Ingredients such as Wagyu, Berkshire pork, eggs, vegetables, dairy, and condiments sourced from the region take center stage in my culinary offerings.
Drawing from my experience, I craft menus that blend Japanese and Western culinary influences. Moreover, I have a deep appreciation for using local and seasonal ingredients to shape my menus, enriching each dish with a sense of time and place.
[…] During the seasonal months, from October to May, I host Ramen Night at Shelter Cocktail Bar
@shelter.yyc as well. This takes place exclusively on Wednesdays, offering a weekly opportunity for patrons to indulge in authentic ramen dishes.
Additionally, I organize a monthly event known as Omakase Night at Shelter Cocktail Bar. This exclusive experience boasts limited seating and is reservation-only, with reservations managed through Tock. Omakase, meaning "leaving it to the chef", mirrors the concept of a Tasting course. Each course presented during Omakase Night showcases the finest local ingredients, produce, and products, culminating in a thoughtfully curated menu.
