-2 Cup whole wheat flour
-2 Tbsp coconut sugar
-1 tbsp baking powder
-½ tsp salt
-2 tablespoon Organic Plant Based Protein Powder-Vanilla
-¼ tsp cinnamon optional
-2 medium beets roasted or boiled and pureed (about 3/4 cup)
-2 cups milk
-2 large eggs
-3 Tbsp unsalted butter melted
-1 Tsp vanilla extract
-Butter for cooking about 4 tablespoon
-Chocolate shavings optional (to top)
-Melt 3 tbsp butter
-In a large mixing bowl, combine flour, sugar, baking powder, salt, protein powder, and cinnamon (if using).
-In another bowl add beets, milk, eggs, melted butter and vanilla. Combine wet ingredients.
-Add wet ingredients to dry ingredients-combine well.
-Heat skillet-medium high heat, put heart mold on & add a pad of butter.
-Whisk the pancake batter & add 1/4-cup batter for each pancake into the heart shaped mold on the hot skillet. (You might have to press down on the mold as you do this so that the batter does not escape from the mold)
-Flip once tiny bubbles appear, add butter around the edges and cook for another minute.
Optional: chocolate shavings on top
*Makes about 15-20 pancakes (1/4 cup measure size).
