Who else is excited for St. Patty’s Day?! A day to celebrate the Irish culture, eat traditional food, and drink the good stuff! In our opinion, parsnips are underrated and should be used in a lot more dishes. We are starting off with an easy parsnip dish that uses the air fryer for a quick roast and a tasty dipping green sauce.

INGREDIENTS :
PARSNIPS:
5 parsnips
1 T EVOO
1 T maple syrup
salt & pepper, to taste
GREEN SAUCE:
½ bunch cilantro
½ bunch parsley
1 C greek yogurt
¼ C EVOO
2 green onions
2 cloves garlic
1 lime, juiced
1 jalapeno, seeded
1 T white wine vinegar
salt & pepper, to taste
METHOD :
To make the parsnips, peel each one and cut into wedges. In a large bowl combine parsnips, olive oil, maple syrup, salt, and pepper. Mix until all ingredients are thoroughly combined. Add the parsnips to your air fryer and cook at 400F for around 15 minutes. Remove from the air fryer once they have turned golden brown.
To make the green sauce add cilantro, parsley, yogurt, olive oil, green onions, garlic, lime juice, jalapeno, vinegar, salt, and pepper into a blender or food processor. Blend until ingredients are smooth and reach a desired consistency.
Serve parsnips with green dipping sauce and enjoy!
