Seared Scallops with Winter Squash Purée and Crispy Sage with a Cider Pan Sauce. This one is minimal effort for maximum wow and it all gets prepared in in one pan (and a blender). If you properly preheat and oil your pan, you create a non-stick surface which allows easy release which you want with delicate scallops. Pat scallops dry with a paper towel. Preheat your pan over medium, add oil and coat pan. As soon as it shimmers, crisp up a few sage leaves, set aside. Next, the scallops get seared in a light mix of olive oil and butter (1:1), and only require a few minutes on each side (maybe 3 depending on size) and are simply finished with flaky salt and fresh ground pepper. Place pan back on heat and working quickly add about 1/2 c apple cider, 1 Tbs cider vinegar, splash of water, a nob of butter, pinch of chili flakes and 1/2 tsp Dijon. Simultaneously scrape the fond from the pan while whisking with liquid until fully combined and uniform. You may add a tsp of flour to thicken it slightly. Pour off and scrape pan with a silicone scraper set aside. Place pan back on the heat and pan sear 1/2” thick slices of squash in olive oil and caramelize each side. When desired sear is achieved, squash should be tender. If the squash isn’t tender, pour in about 1/4 cup of water, cover and allow to steam until liquid is gone and squash is cooked through. Remove from pan. If a lot has stuck, deglaze with just enough water to scrape it loose and add this to purée. (Or, you may toss with olive oil, kosher salt and pepper and roast at 425 for about 20 mins.) When cool enough to handle safely, purée with any one or combination of the following (very little liquid required) water/veggie stock/cider/orange juice with a splash of good vinegar- cider, rice, sherry, (optional touch of cream or crème fraiche…). To plate: spread a nice bed of purée and top with scallops and sage. Drizzle a small amount of the pan sauce. I love serving this with a baguette. A toasted pumpkin seed garnish is nice here too.
