Winter Squash Lasagna with Smoked Mozzarella and Buttery Sage. Hands down, one special meal. Several years ago, I was visiting Rome and had the pleasure of cooking with @alice.adamscarosi and this was our main. It’s crazy special with amazing depth of flavor (like eye rolling), creamy satisfying texture and definitely brings that wow factor to the table. I’ll give a how to below. Yes, there are a few steps, yet each is not complicated. If you don’t have the bandwidth to make fresh pasta sheets, store bought substitutes beautifully. This one is sitting in a puddle of roasted tomato purée (optional). And, I snuck in some kale. Here you go- Quantities dependent upon how many you’ll be serving. Leftovers reheat beautifully, if your lucky enough to have any. •Fresh pasta sheets, homemade or store bought •Generous pot of bechamel (minimum 4 cups milk) generously scented with nutmeg (sometimes I also toss in a bay leaf, many recipes online @inagarten always a great reference) •roasted winter squash, like honey nut, butternut… (here red kuri) •smoked mozzarella or scamorza, sliced or torn •fresh sage leaves smudged with butter •fresh grated Parmesan for topping •red pepper flakes, to taste Layer it all up beginning with the bechamel, then pasta squash, a few sage leaves and more bechamel. Repeat. For the top layer, finish with Parmesan, your mozzarella (or scamorza) and butter smudged sage leaves (these will crisp nicely). Bake in a preheated 350F oven until edges are bubbly and top has begun to brown. May be assembled the day before. This one will be making an appearance Christmas Eve.
