Creamy Dreamy Black Garlic Hummus. I’ve been able to find black garlic at local farm stands recently. Otherwise at specialty stores or online. It’s well worth hunting down. Black garlic is garlic that has been fermented. It’s milder than raw garlic and not pungent. It’s flavor profile is slightly sweet and tangy with hints of molasses, licorice and tamarind. It’s also easy to digest. You may even spread it directly onto buttered toast. Black Garlic Hummus 1 1/2 c garbanzo beans cooked per package directions with 1 tsp baking soda and a sprig of savory (do not salt) 1/4 cup tahini (heaping) 1+ tsp flaky sea salt, adjust to taste Juice of 1 large lemon or 1 1/2 small lemons, zest for garnish 1 clove black garlic Fresh ground pepper Pinch cumin 3-5 ice cubes Za’atar for finishing Sesame seeds for finishing Good olive oil for final drizzle Small handful pitted olives of choice, torn or chopped Chopped parsley Once garbanzos are cooked through, give them a good stir to encourage any loosened skins rise to the top. Skim and discard. If you have the patience, go ahead and peel all of them. Add to a high speed blender with a couple of Tbs of the cooking liquid, tahini, clove of black garlic, lemon juice, cumin, salt and pepper. Blend and tamp down as needed while adding ice cubes one at a time to achieve desired consistency. Adjust seasoning.
